Is there any reason only the first episode of Irregular is on iTunes?  I just recently listened to the first episode and went to subscribe, but it was the only one there.

Hm, all three are there for me.

Same issue with the RSS feed, only episode 1 is there (also with the google feed and BeyondPod, etc).

Oh, yeah, looks like the feed only has the first episode now for some reason, and the iTunes feed just uses the RSS feed. It used to have more and they all downloaded for me at one time, so that's why I have them all.
